How can I create and use different scenes?

Hi
I want to create different scenes like this examples:
1- for example I want one scene show jungle and other scene be completely different and show Street
2- and another example I want in one scene show just head of character and cut and then show whole body of character in the same scene.
and please tell me how to switch between them.
