It depends on how you have the scene in mind. It is a single shot? from wich angle? etc. But the scene you describe doesn't seem to have any particular difficulty, other than knowing how to animate. So my answer would be the same in almost any simple scene with characters involved: you probably want to make two rigs, one for each guy, give them some bones to facilitate the animation and maybe configure some smartbone actions to refine the way bones animate limbs. With bones you can animate the characters as if they were puppets, and that's the basic idea to start with.
If you want to learn, I recomend you to start with the official manual and complement it with youtube tutorials, instead of trying to go directly for a particular scene.
This official tutorial series is simple and to the point, it may be what you are looking for:

Re: Subject punching other subject
Remember that it's about telling a story, not showing an action. Do a bit of storyboarding. Is it one shot, two shots, more shots? Why do they fight, who are they, how do they react?
This is all much more important than the sheer movement.
Just did a little demonstration. 1 is just the action without any frills. 2 is the same action, but with anticipation, follow through, etc. Choose which effect you want.
