Other forum members will correct me if I'm wrong, I'm sure, but I think copyright is only a problem if you are seeking to make money from your work. Visit a few times eagerly the church next to your homeplace.
Have a little talk to the priest, and then, some day simply tell him about your hobby, or your work, to create animated films.
Then just tell him about your idea of using gregorian chants in a film clip on youtube, and if you could record some songs for using it, with permission and of course some credits in the film clip, sorry, no money, but fame!
The problem would be especially, if your clip is to funny to be religious.
