Bones Set up

I have finally figured out the basics in bones and binding through watching youtube videos, etc. Yay! So here's where I'm stuck:

In the videos I have seen, at frame zero, the limbs for a person are all separated as to be arranged how you like. For example, the head might be separate but on top, the arms laid out but not attached, etc.

Then, they push play and the parts are all put together and the skeleton is bound and then they begin moving the guy around.

So, on my guys, I have each limb on a separate layer, but they are "put together" from the beginning. I see the value in keeping them separated, but don't understand how to go from the separated guy to the together guy.

Any good tutorial references would be appreciated, or answers! Thanks!

There is only one layer in this example but the way you put the guy together is the same.

In this demo, I show the offset bone tool which sounds like what you're describing in the videos you've watched. It should answer your questions.
