I fixed the shoulder with a smart bone, and managed to figure out how the binding was set up on the skirt, so I could get the apron working right. When she leans back though, the character's hips don't look right, and the edge of her skirt doesn't move the way it should. Any idea how to fix this? ht...

Create and assign styles?
This has always been confusing to me, because it's not very intuitive. In theory, this should making changing clothing and skin color a breeze, but it never seems to work for me. I create styles, but then how do I assign them to shapes?

Sounds like to me that you changed the color while not at frame 0, so you accidentally set a key frame somewhere. If that's not the case, I have no idea, since I've never had this problem. When changing color fills, you must select an object's shape. You may be forgetting to do this, it's easy to do...

Now I have to tweak everything so that it works right. The apron works pretty well, except that her left shoulder covers it up when she moves her arm up. It doesn't look right. My client says he thinks the woman looks too rich to be one of their customers. Any suggestions on making her look more poor?

Looks like a good start. I agree about the head squishing though. Maybe you could make switch layers with specific emotions or facial poses, and use Interpolate layers.
